Caramel Sugar Cookies

Ingredients

  • 1 cup , softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup caramel bits or chopped soft caramels

Instructions

  1. Cream butter and sugars until light. Beat in egg and vanilla.
  2. Whisk flour, baking soda, and salt. Mix into butter mixture.
  3. Fold in caramel bits.
  4. Scoop 1 1/2 inch dough balls and place on baking sheet.
  5. Bake at 350 F for 10 to 12 minutes until edges are lightly golden.
  6. Cool on sheet 2 minutes, then transfer to rack.
